Typical products
In Caramanico the union between the rural traditions and the territory gave birth to products well known in the whole country.
From the wildflower honey, already awarded as Italy’s best honey, to other typical products of the territory, such as the wide choice of cheese produced by the local shepherds of the Maiella and the solina wheat, cultivated in this area since the 14th century.
The wildflower honey of the Maiella is famous in the whole country and in 2008 it received the award of “Italy’s best honey”, during the Honey Week in Montalcino, a benchmark event for the beekeeping world where every year the best honeys in Italy are awarded.
It is a unique honey both for its scent and its flavour, along with the several properties of the plants surrounding the place it is born in. Among these it is common to feel the scent of oregano and thyme, giving the honey an irresistible taste. The honey of Maiella is very versatile and can be used in different ways: in the coffee, on toasts, in yogurts or in the making of biscuits and cakes.
The Solina wheat is the typical soft wheat of Abruzzo’s mountains that has been preserved until today for its peculiar characteristics related to its taste and scent, which is then transferred to handmade bread and pasta.
It is very resistant to the cold, rustic, whose yield is stable but limited even on little fertile lands and particularly suited to biologic agriculture. According to some ancient documents, it was already used during the 16th century.
The Solina wheat is an example of a bond historically documented between a variety and the territory; the awareness that it is an ancient cereal is also attested by some popular sayings like the following one: “The Solina wheat is the mother of all grains;…if you want to make flour, grow Solina”.
Among Abruzzo and Caramanico’s typical products we found a wide choice of cheese.
The tale regarding cheese coming from this land must include the pecorino cheese for first, a product whose taste is unique and present in different variants: the pecorino from Farindola and the marcetto.
Decisively sweeter and more delicate than pecorino is the giuncata, made with a mix of sheep and cow milk, known in Abruzzo since the Middle Ages. Other traditional cheeses are cow cheese, perfect if accompanied by some fresh bread and goat cheese, whose taste is very intense.
In Caramanico it is possible to visit Fattoria Majella; their cheese is made with the milk of red spotted cows, strictly raised on free-ranged pastures.
Fattoria Majella is the perfect place to buy local products, made with genuine, zero-kilometres raw materials; ask them some advice on how to taste them in different occasions.
Angela and Marina De Angelis chose to re-start their family farm following the tradition that drives every single product they make. Da come una volta is specialised in the production of cheese made with patience and passion, the necessary ingredients in order to make high quality products. All the cheeses made by this farm are preservatives and ferments free, with traditional methods, starting from the milk obtained by the sheep farmed directly by the De Angelis sisters.
In the heart of the Maiella National Park, among blossoming grasslands and buzzing bees, is located the Azienda Agricola Amoroso that for decades has been producing the honey of Maiella. The farm is still using ancient working methods strictly tied to tradition, avoiding the use of chemical and thermic for the modification of the enzymatic structure, leaving the honey its natural properties and placing the beehives in uncontaminated high-altitude areas within the municipality of Caramanico Terme.
Deb’s Brewery is a small and young brewing company, always looking for the best raw materials for their product. Deb’s beers are made with Solina wheat, a typical grain of the area used since the Middle Ages, flavoured with mountain honey from local producers and biological spices. Deb’s brewery does not filter or pasteurizes their beers, basing the production on simple methods that leave the strong mark of Caramanico’s territory in their taste.
In Decontra, a district of Caramanico Terme, is located the Agriturismo Pietrantica. The farm was realised starting from very old stone barns, renovated according to the original building techniques, using the Maiella stone, wood and terracotta. The farm is central in a project dedicated to a sustainable, local development, trying to raise awareness in their guests about sustainable tourism. During your stay in Pietrantica it is also possible to re-discover ancient tastes tied to the local tradition, as some fragrant homemade bread or biscuits made directly by the guests.
